Celebrating National Snack Food Month with Chunky Chewy Cheesecake Brownies


At the beginning of the year, you probably promised yourself that you would limit your snack food intake. Now, we’re almost at the end of February, and we bet your snack food craving has come back with a vengeance. This may not necessarily be because of your newfound diet. This may be a result of your subconscious informing you that February is the perfect time to indulge in some of your favorite snacks. After all, it is National Snack Food Month!

Yes, February is National Snack Food Month. It’s the perfect time to celebrate all of your favorite guilty pleasures (and some healthy ones too). In honor of National Snack Food Month, we’re sharing a favorite snack food recipe that everyone will certainly enjoy: Cheesecake Brownies

Ingredients

  • 1 softened package of 8 oz. cream cheese

  • ¼ cup white sugar

  • ¼ cup butter

  • ¼ teaspoon salt

  • ½ cup white sugar

  • ½ teaspoon baking powder

  • 2/3 cup all-purpose flour

  • 2 cup of chocolate chips

  • 3 eggs

Directions

As seen on TV, copper pans are easy to use for baking some of your favorite meals, desserts, and snacks. To prepare these melt-in-your-mouth brownies, preheat your oven to 350°F. While your oven is preheating, grease your baking pan. Its best to use a 9- 14 inch pan for these brownies.

In your bowl, combine, the cream cheese, sugar, and 1 of the eggs and beat the batter until smooth. Stir in 1 cup of the chocolate chips and set aside.

Fill a non-stick pan with water and let it boil. Turn the water off once it’s reached a boil and let it sit. Then, in your mixing bowl, combine the butter and remaining cup of chocolate chips. Stir until the mixture is just melted and blended. Then stir in the remaining sugar, and 2 eggs. Sift the flour, baking soda, and salt together. Stir into the chocolate until blended evenly.

Take your batter and pour half of it into your baking pan that you previously prepared. Spread the cream cheese mixture over the chocolate layer then top with the remaining chocolate. Using a knife or skewer, swirl the top layer of chocolate and the cheesecake to create a marbled pattern.

Bake for 25 – 30 minutes and then let cool. Cut into 16 squares and enjoy!

This is just one simple recipe to enjoy Snack Food Month! Whether you prefer kale chips over potato chips or chocolate covered pretzels instead of yogurt covered raisins, now is the time to dive in to the stack of food that you’ve been trying to avoid for the past few weeks.
